Meet The Team

Tom and Jeanine Springer - Owner/Operators

Tom and Jeanine Springer met in the town of Farmington, NM. Married now for over 35 years, they are parents to daughters Ashley Springer and Jessie Briscoe. Together, they are a phenomenal team and the backbone to the management staff at the Pecan Grill. Tom is an avid outdoorsman and Jeanine enjoys spending all of her free time with her two horses, Turtle and Notchie. You can find them most nights enjoying one of Chef's signature dishes in the bar. Feel free to stop and say hi!

Ashley Springer - Marketing & Special Events Director

Ashley holds a degree in Journalism from the Walter Cronkite School at Arizona State University. She previously worked for four different publications in both the Scottsdale, AZ and Albuquerque, NM areas. She moved to Las Cruces in February of 2010 to help run the family business; starting with the Marketing aspect of the position, she has since moved into general operations in the hopes her parents can truly retire. She encourages any and all feedback on how the Springer family and the De La Vega team can better the Pecan Grill to ensure an absolutely perfect experience every time.

Bob Brainard - Executive Chef and Catering Manager

Bob moved to Las Cruces two years ago. He boasts over 20 years experience in the restaurant industry holding every position from dishwasher to Executive Chef. He has owned two of his own restaurants both in Colorado, served the rich and famous in Aspen and has worked extensively in the catering industry. Bob stays true to the agriculture of the Mesilla Valley with fresh, seasonal ingredients and creates the menu accordingly.

Nick Pederson - General Manager

Nick came to Las Cruces from Minnesota to pursue a degree in Business Management. It was within the restaurant industry that he found his true calling; wine and spirits. Beginning as a bartender at a local dive bar, Nick worked his way to the General Manager position of a successful fine dining establishment. There, he enhanced his knowledge of the art that is pairing food with beverage. Whether its pairing a steak with the perfect Cabernet, a martini or scotch to match the palate, Nick's goal is to ensure the customer experiences an unparalleled dining experience that feels like a little "time away." Be sure to ask him for his newest wine list addition, or information on upcoming wine and spirit tasting held inside De La Vega's! "Cheers!"

Christopher Delgado - Assistant General Manager

Christopher brings "hands on" experience to De La Vega’s. Starting as a bartender in a local pub in 2002 he continued to hone his trade gathering knowledge and people skills. He left the corporate world and started at De La Vega’s in December 2010. Christopher is currently a Jack-of-all-Trades ("I wish we could clone you...."), hiring and training manager, scheduler, and over all floor manager. "I love my job and I’m happy to be part of the De La Vega Team."

Justin Merrick - Assistant Manager

Justin is originally from Cloudcroft, NM where he worked at The Lodge for five years learning fine dining. He traveled to Alaska and worked for Princess Cruise Lines just miles away from Mount McKinley, where he served patrons from all over the world and fine tuned his serving skills. Justin helped open De La Vega's, even hanging the bar mono rail lights and painting walls throughout the building. He is confident in dealing with the ever changing environment that is a part of the restaurant industry and a valuable asset to the De La Vega's serving staff.

Shawn Hunton - Assistant Manager

Shawn has over 15 years experience in the Restaurant Industry, working on the teams of the most notable locally owned restaurants in Las Cruces. Due to his degree in Philosophy and desire to become a teacher, it was only natural he became the head Server Trainer here at De La Vega's, and now uses his expertise in education to train new employees, helping to make De La Vegas a well rounded, well educated restaurant. His world travels have helped out greatly in educating the staff in worldly service etiquette from Europe, Asia, Mexico and South American cuisine making Pecan Grill employees take a broader view when dealing with service and the culinary arts. Shawn is an integral part of the training and server smiles here at the Pecan Grill.

Colette Caskie - Events Coordinator/F&B Manager

Colette came to the Pecan Grill by recommendation through the HRTM school at NMSU. Having recently graduated she was, (and still is), hungry for knowledge in all fields of the restaurant industry. Lucky for both parties, she found the Pecan Grill. Colette works in all aspects of the restaurant including food and beverage control, inventory control, event planning, FOH managing and keeping our staff upbeat with her hilarious personality...which truly makes her shine. She is happy to help any customer with special reservations or celebrations.
